About Australian Wagyu MB6-7
Australian Wagyu is beef from Wagyu-genetics cattle raised in Australia, graded on the Marble Score (MB) system — a different framework from Japan's JMGA. K.K.&K. imports MB6-7, the range that delivers clearly visible marbling on the plate while keeping per-plate cost workable for high-volume operations.
Our main cuts are Karubi Plate (short plate/belly), with rich marbling that performs well over fire for yakiniku and grilling, and Outside Flat, a firm lean cut that slices thin cleanly — suited to restaurants that want Wagyu on the menu while holding cost.
Australian and Japanese Wagyu do different jobs on a menu rather than replacing each other. Many of our customers run Australian Wagyu MB6-7 as the base of a course or buffet, with Japanese A4-A5 Wagyu as the signature or feature item — keeping total cost in frame while still giving guests a genuine premium beef experience.
