About Shima Hokke
Shima Hokke is one of the most consistently ordered grilled-fish items among Japanese restaurants in Thailand — firm flesh, good natural fat, clean flavour, and crucially it arrives already butterflied and ready to grill. The kitchen opens the pack and puts it straight on the grill: no scaling, no gutting.
The most-ordered size is the half piece at 300-350g, 30 pieces per carton, which suits both single plates and lunch sets. For a lower cost per plate there is also a 275-305g size, also 30 pieces per carton. Because it is counted by piece rather than weighed, food cost per plate is exact with no trimming allowance needed.
For restaurants wanting a larger visual presentation, Jumbo Shimahokke (hiraki, flat-split) is available in an extra-large size, along with Okhotsk Hokke sold by the kilogram for kitchens that prefer to select sizes themselves. Everything ships frozen under temperature control and keeps well in the freezer, which removes waste risk on unpredictable days.
