About Salmon & Trout
K.K.&K. imports both salmon and Norwegian trout in sashimi grade for sushi bars, Japanese restaurants, hotels and central kitchens. They look similar but are not the same fish — trout has deeper orange flesh with fine marbling and a soft, sweet taste, and is the one most Thai sushi restaurants use for sashimi. Atlantic salmon runs larger with firmer flesh, working well for sashimi, grilling and hot dishes alike.
On the salmon side there are options for different budgets and workflows. Chilled Salmon Fillet Trim C is never-frozen and pre-trimmed ready to slice. Frozen Salmon Coho Fillet Trim C at 1,200-1,500g per piece is more economical than Atlantic while keeping good colour and texture. Frozen Chile Salmon at 5-6kg and Frozen Atlantic Salmon (Norway) head-on gutted at 4-5kg and 5-6kg suit kitchens that fillet in house — lowest cost per kilo, but labour and filleting yield loss must be added back.
On the trout side we carry Norwegian Trout head-on gutted at 4-5kg and 5-6kg, Frozen Trout Fillet at 900-1,000g per piece, and Fillet Trim C at 1kg up per pack (10kg per carton). Ready-to-use processed items are also available: Smoked Salmon Slice in both 1kg and 50g packs, and salted Salmon Kirimi at 110g per piece (30 packs per carton) for boxed meals and hotel breakfast sets. Everything ships under temperature control, and our team can compare cost per plate between whole fish and pre-trimmed fillets for you.
