About Salmon & Trout

K.K.&K. imports both salmon and Norwegian trout in sashimi grade for sushi bars, Japanese restaurants, hotels and central kitchens. They look similar but are not the same fish — trout has deeper orange flesh with fine marbling and a soft, sweet taste, and is the one most Thai sushi restaurants use for sashimi. Atlantic salmon runs larger with firmer flesh, working well for sashimi, grilling and hot dishes alike.

On the salmon side there are options for different budgets and workflows. Chilled Salmon Fillet Trim C is never-frozen and pre-trimmed ready to slice. Frozen Salmon Coho Fillet Trim C at 1,200-1,500g per piece is more economical than Atlantic while keeping good colour and texture. Frozen Chile Salmon at 5-6kg and Frozen Atlantic Salmon (Norway) head-on gutted at 4-5kg and 5-6kg suit kitchens that fillet in house — lowest cost per kilo, but labour and filleting yield loss must be added back.

On the trout side we carry Norwegian Trout head-on gutted at 4-5kg and 5-6kg, Frozen Trout Fillet at 900-1,000g per piece, and Fillet Trim C at 1kg up per pack (10kg per carton). Frequently Asked Questions

What is the difference between salmon and trout, and which should I use?
Trout has deeper orange flesh, fine marbling, a soft sweet taste and a smaller body — it is what most Thai sushi restaurants use for sashimi. Atlantic salmon is larger and firmer and holds up better to heat, so it suits sashimi, grilling and hot dishes alike. For sashimi-only menus on a controlled budget, trout usually works out better value; for a mixed menu including hot dishes, salmon is more versatile.
Is whole fish or fillet better value?
Whole (head-on gutted) has the lowest cost per kilo, but you need someone to fillet it and you lose weight to head, bones and skin, which must be built into the real cost. Trim C fillets cost more per kilo but are almost fully usable and need no dedicated filleting staff. Kitchens with a chef and high volume usually come out ahead on whole fish; smaller or short-staffed kitchens usually do better on fillets. Our team can run the comparison for you.
How does Coho salmon differ from Atlantic salmon?
Coho is smaller, leaner and slightly firmer, and costs less than Atlantic while still giving good orange colour and working for sashimi. It suits restaurants controlling cost but wanting a similar plate appearance. We carry Coho as Trim C fillets at 1,200-1,500g per piece.
Do you have chilled (never-frozen) options?
Yes — Chilled Salmon Fillet Trim C stays chilled throughout and is never frozen, so the texture differs from frozen product. It must be ordered on schedule and used within a much shorter shelf life. If you need stock flexibility, the frozen formats are easier to manage.
