K.K.&K. imports sashimi-grade tuna and maguro for sushi bars, Japanese restaurants, hotels and buffets — covering premium cuts such as Otoro and Chutoro through to high-volume cuts like Akami and tuna saku blocks.

The most frequently ordered format is Tuna Saku AAA, 500-800g per piece, 5kg per carton — pre-trimmed into rectangular blocks so the kitchen can slice straight away with no trimming waste, making cost per piece easy to control. Higher-volume kitchens usually order Tuna Loin grade AA, 2.5kg up per piece, 20kg per carton, which has a lower cost per kilo but needs in-house trimming.

On the fresh side we carry Maguro Hara Akami at 4-6kg and fresh tuna loin at 3-7kg for restaurants that want never-frozen texture. Specialty cuts are also available, including tuna cheek meat (Hohoniku) for grilled dishes and Bincho Maguro (albacore), a pale, soft-textured tuna well suited to tataki and conveyor-belt sushi. What is the difference between Tuna Saku and Tuna Loin?
Saku is pre-trimmed into rectangular blocks of 500-800g per piece (5kg/carton), ready to slice with zero waste. Loin is the whole piece at 2.5kg up (20kg/carton) — cheaper per kilo but it needs in-house trimming, so it suits kitchens with a dedicated chef and high volume.
What is the difference between Otoro, Chutoro and Akami?
They are different parts of the same fish. Otoro is the outer belly with the most marbling — richest and most expensive. Chutoro is the middle belly, well balanced in both taste and price. Akami is the lean red meat: clean-tasting, lowest in fat and the most economical, typically used as the base for high-volume menus.
What is the minimum order and how is it shipped?

Do you carry fresh tuna, or only frozen?
Both. Fresh options include Maguro Hara Akami at 4-6kg and fresh tuna loin at 3-7kg, which must be ordered ahead according to shipment schedules. Frozen items (Otoro, Chutoro, Akami, Saku) are held in continuous stock and are more consistently available.
