About Unagi Kabayaki
Unagi Kabayaki is Japanese eel already grilled and glazed with kabayaki sauce. It lets a restaurant put unadon / unaju on the menu without a charcoal grill or a chef who specialises in grilling eel — the kitchen simply reheats and plates.
The most-ordered format is 70 pieces per carton, sized for a standard eel rice bowl and for delivery menus. For larger portions — a wooden-box unaju or a higher-priced single plate — there are 45 pieces per carton and 60 pieces (1 carton / 10kg) options. Counting by piece means food cost per plate is exact, with no trimming allowance.
Smaller packs are available for lower-volume kitchens: 125g per piece, and a white-soy version, Shiro Shoyu 145g, which is milder and gives a lighter plate colour than the dark sauce. Unagi sauce in 2kg bottles (6 bottles per carton) is sold separately for kitchens that finish to their own recipe, and fresh wild eel (Unagi Tennen) is available by the kilogram for premium restaurants that grill in house.
